Local Variety?

I have had a task of planning two orchards with local, heritage & rare fruit trees. Immediately I had the dilemma of defining what is meant by local. Apples, for example, have been evolving, cross-breeding, been selected for many thousands of years. They’ve been shaped by the eating preferences of large animals, at a time when there were neither pomologists or other humans in the area. The small varieties travelled by the vagaries of seeds being spread by birds and some were cross pollinated by other larger varieties, carrying a wider genetic variability. At some points
